Nothing says summer like a tall, cold glass of refreshing iced tea. But traditional iced tea—made with black or green tea leaves—has caffeine, which not only interferes with sleep, but is also dehydrating. A great solution is this delicious, flavorful, as-sweet-as-you-want-it summer drink. (Bonus: the rehydrated figs are also delicious.)


Yield: 2-3 servings
This caffeine-free alternative to iced tea is sweet and refreshing.


3 cups filtered water
4 teaspoons ginger, julienned
1/4 teaspoon cinnamon, ground
Pinch powdered stevia, or liquid sweetener to taste
5 dried Calimyrna figs

Place all ingredients into a large glass jar. Set in the sun for a few hours to “brew” and for the figs to hydrate. Serve chilled or warmed.
