Teach the kids that comfort foods don’t necessarily mean bad-for-you fare with these two flavorful recipes. (Neither dish involves actually cooking the food, so your young chefs might even be able to whip these up on their own!) 

SPICY WALNUT TACO MEAT 

Simplifying your dinner requests with a build-your-own taco bar? Use this recipe as the base, and let the kids pile their tacos with freshly sliced veggies and guacamole. 

Yield: 4 servings

Food processor 

INGREDIENTS 

1-1/2 cups soaked walnuts, ground 

2 teaspoons soy sauce or tamari 

1-1/2 teaspoons cumin 

3/4 teaspoon coriander 

To taste cayenne pepper 

Mix it all up and put in whatever type of wrap you like! Try it with salsa on romaine leaves.

CHEEZY MASHED “NOTATOES”  

Let the kids try these mashed “potatoes” before you reveal the healthy secret ingredients.  

Yield: 3 – 4 servings 

Equipment 

Food processor 

INGREDIENTS 

2-1/2 cups cauliflower, core removed, and coarsely ground 

1/4 cup macadamia nuts, coarsely ground 

1/4 cup olive oil 

3 tablespoons nutritional yeast 

1 teaspoon unrefined salt 

1 clove garlic, peeled 

Combine all ingredients in food processor. Process until mixture looks fluffy, like conventional mashed potatoes.
